.. side dish heaven ..

I've been so sick this past week, that I haven't managed much more than semi-regular trips to the bathroom and mindless browsing on the internet. I wanted to put together a fun post on all the pretty things I've recently acquired, but that will have to wait for another day. Despite being sick, my appetite is still quite good, so I didn't mind revisiting the food that my mom and I prepared for Christmas. We made so much of it, but we usually have hordes of family/friends over for dinner, that there's not much leftover. Sad.

.. a taste of thanksgiving ..

This is months late, of course, but let's be honest, food is good any way you can get it. My mom and dad were away on vacation during Thanksgiving, so it wasn't the usual loud and bustling affair, but still quite nice. I attended one Thanksgiving dinner, and that was lovely, not only because of the great company, but I also didn't have to cook or clean! I'm never one to rest on my laurels though, so I was back in the kitchen that weekend for my very own Thanksgiving feast. Here's a sampling of what I cooked...

I'm back!! It's been about a year and a half since my last blog post, and a lot has changed in my life. I think they've mostly been positive changes, but because I was so busy after starting a new job, I took a break from blogging that somehow turned into a year and a half vacation from sharing my fancies with you, dear reader. I've really missed it though, and I couldn't think of any reason why I shouldn't go back to it. There will be lots more to come, and I have some fun ideas for photo shoots and maybe even trying my hand at some videos.

.. father's day feast ..


I wanted to show you some pics of the Father's Day feast I prepared. I was so harried that day, mostly because I underestimated the time I would need to get everything ready, that I unfortunately didn't have time to take pics at each stage of the cooking process. Therefore, I'll just show you a little bit of what I was able to capture, and maybe in the future I'll do a proper recipe post for everyone!

My dad loves seafood stews, and when we visited Mexico years ago, he fell in love with their version of a fisherman's stew. I decided to make the French version of it--bouillabaisse--just for a bit of variation. My mom helped me out tons on this one, as she purchased the freshest red snapper for me. She brought home two whole fish, and cleaned and filleted them! In addition to that, she used the bones from the fish to make me the sweetest, most flavorful broth ever. At times, you might worry about a fish stock being overly fishy, but if you use quality ingredients that are really fresh, and you make sure to smell and inspect your ingredients, you should be fine! My mom actually made me a fish stock and a chicken stock, and combined the two for a milder, more well-rounded flavor profile. If you can make your own stock, do it. It'll make your soup taste all that much better. As you've probably already gleaned, I don't really cook from recipes, but I did take a look at a few online for inspiration/reference. This recipe from Epicurious is a nice one, and the rouille takes the dish to a whole other level. You add it to each bowl of soup and it provides that extra kick of garlic, and because it's bread based, it thickens the soup just right.

My version of bouillabaisse is filled with all kinds of fresh seafood--prawns, clams, mussels, red snapper, scallops, crabs, and squid. I don't think I'm forgetting anything, but I can't be sure! I would've added lobster tails, too, but given how many were dining with us, it just wasn't that practical. Also, I added potatoes, beech mushrooms, carrots, leeks, and tons of onion and garlic. I think the fennel, saffron, and rouille make it quintessentially French, so those elements were not to missed. The stew was served with crusty french bread, which I lathered with a roasted garlic butter I made, topped with some grated pecorino romano (that I had leftover from the pasta carbonara I prepared), and then under the broiler for a couple of minutes.

For the pasta carbonara, I used two types of thick cut bacon, and added peas and herbs to it. For this dish, you'll render and crisp the bacon first, remove most of the bacon fat, but leave some of it in the pan to saute the onions and garlic in. This was super easy and delicious, so I might be making this more often. I know this isn't typical, but I made a light cream sauce and added some white wine as well, in addition to the beaten eggs with romano that I stirred in at the very end (make sure the heat is off at this point, as you don't want to scramble the eggs). Be careful with how much salt you add, because the pecorino romano and parmigiana reggiano are quite salty already. I think it turned out really well.


Hope you try these dishes for yourself!! I know they're not the prettiest of dishes, and had I had more time, I would've plated them up nicely, but you know how it goes. Anyways, it's more of a rustic meal. For this menu, I think there's a little bit of something for everyone's liking, except not if you're a vegetarian, of course.

Lastly, we had a great apple tart for dessert. I always want to make dessert, but often don't have the time for it. I wanted to serve it with vanilla bean ice cream, but completely forgot about it when I was at the store, so I just whipped up some cream that I had leftover, and added some sugar and vanilla extract to it. That worked just as well!

.. cherry picking ..


The weather was perfect last weekend, and on Saturday, we took a long trip inland for some cherry picking. I had never seen cherry trees before, and for some unknown reason, just assumed they were lower to the ground (more bushy), but in fact they can grow fairly tall and large. It was a lot of fun, but exceedingly hot, so I was very thankful for my large hat and sunscreen. Sadly though, I had to abandon my cute little cropped jacket, as I started to sweat immediately after exiting the car.

Anyways, on to more pleasant matters...the cherries were so pretty, and we all couldn't help gorging on them. We probably ate just as much as we picked. We were practically tasting cherries on every tree, trying to find the sweetest ones in the bunch, but let me just warn you, that's not a great idea! After awhile, your tummy starts to hurt.

Hah, well what was supposed to be a pleasant post on cherries has turned into excessive talk about sweating and tummy aches. Let's just end things here, while we're ahead...It was a good time, and you all should find a cherry farm and indulge!

.. this week in fancy | 06.13.11 ..

Sorry for the absence, I've been working on a couple of different projects, and haven't gotten a chance to post anything new. Thought I'd do a quick fancy week in review of some of the things that have caught my eye!

** New listing at the OFT shop!


** Elle Fanning is so adorable. Love her, and she's an amazing actress! Super 8 was superb, and I totally recommend it to everyone. There's a scene where she pretends to be a zombie, which was kind of chillingly good. Here she is on Jimmy Kimmel Live yesterday. Her laugh is so infectious!!


** Holy crap, Game of Thrones was crazy this past Sunday. I just started reading the books, so I didn't know what was coming. (Spoiler alert) My friend warned me that no one was safe. I can't wait to see what's to come. The book and show have been great so far. Plus, the EW recaps each week are a nice little bonus.

** This GQ article with Chris Evans is so cute, dorky, and funny. I never really gave him any thought before, but wow, he's charming and self-deprecating! I think this piece will definitely win him some fans, and the writer, Edith Zimmerman, is adorable.

** I want these Louboutin shoes so bad. Just spectacular. Best think of a way to make more money fast!

** Trying to decide what to cook for Father's Day. I think I'll make a seafood stew (like a bouillabaisse), since my dad is a big fan of fresh seafood, and brothy deliciousness. In the meantime, I think I'm going to have something hearty for dinner tonight, similar to these smothered pork chops I made recently!

.. food and celebrating ..

It's my mom's birthday today, so I guess it's kind of fitting that I post pics of the food and flowers from Mother's Day!! Hehe, well that's me putting a positive spin on things, since I should've posted these pics a week ago probably.

My mom suggested a more healthy dinner, which is not something I do very often, but I was game! I thought a Mediterranean inspired meal might be nice, and it turned out pretty well.

 Pasta as a side, tossed with a little butter, olive oil, herbs, and spices.

 A salad of cucumbers, tomatoes, bell peppers, fresh mozzarella, and aged feta cheese. It's tossed with a vinaigrette of olive oil, balsamic vinegar, lemon, honey, etc.

 These are one of my mom's favorites!! On this occasion, I sauteed the snails in some white wine, butter, onions, garlic, chili flakes, and lots of herbs and spices.

Green beans, Japanese eggplant, and several types of mushrooms come together for a great little side dish.

Do you remember when fish en papillote (fish in parchment) was all the rage?! I recall being a lot younger and watching the food network chefs make countless variations of this! I've never made it, but thought I might try it out this time around. The fish is red snapper, and seasoned simply with salt, pepper, and lemon juice. The fish is also garnished with roasted red and yellow peppers, capers, olives, onions, garlic, and more herbs and spices. This turned out delicious, and so simple to make. I couldn't believe how good!! Cooking it in parchment, on high heat (~400 degrees fahrenheit), for a short amount of time (~10-15 min) was perfection. I had prepped the packets beforehand, and put the fish in the oven right before we were ready to sit down for dinner. The fish is piping hot when it comes out, and I love all the steam that escapes when you tear into the parchment. You can sop up all the great jus as well with some nice crusty bread.

Dessert, which I didn't make, but was delicious all the same. We had a raspberry lemon tart, and an assortment of mini cupcakes and cheesecakes.
